Ingredients
Use the following ingredients to make this toasted sandwich:
- 2 slices of toast
- 1 egg
- 1 tomato
- 1 salad onion (spring onion)
- Generous pinch of salt and pepper
- 1 tsp of mayonnaise
Method
Follow this method to enjoy this simple breakfast toasted sandwich:
- slice the tomato and season with the salt and pepper
- Finely chop the salad onion
- Warm a small frying pan on a medium heat and add a small drop of oil
- Beat the egg is a cup and then add to the frying pan – cook the omelette to your liking, I like it to still be a bit runny on top
- Build the sandwich as shown
- Slice in a diagonal and enjoy with a cup of tea or coffee
How to build the egg, tomato and onion toasted sandwich
Place the remaining piece of toast on top and then cut on the diagonal.
Variations
You can adapt this recipe easily with the following variations:
- Throw the onions and tomato in with the egg
- For protein hit add mushrooms to the omelette

Equipment
- toaster
- Small non-stick frying pan
- Silicone spatula
Ingredients
- 2 slices toast Pick your favorite bread
- 1 tomato
- 1 salad onion Also known as a spring onion
- 1 tsp mayonnaise
- Generous pinch of salt and pepper
Instructions
- Put the frying pan on a medium-high heat and add a splash of oil or butter
- Beat the egg and add to the pan and cook to your liking, folding the edges in slightly with the spatula as it cooks (this is so it fits nicely in the sandwich)
- Slice the tomato and onion
- Season the tomato with the salt and pepper
- Build the sandwich starting with the omelette
- Then add the mayonnaise
- Then the tomato and onion
- Slice on the diagonal and enjoy
