Cheese and Mushroom Toasted Sandwich

Rich and gloriously melty Swiss cheese with an earthy mushroom kick

Ingredients
  

  • 4 Slices Thick white bread Or your favorite toasting bread
  • 3-4 Chestnut Mushrooms These provide a better flavor than plain button mushrooms
  • 25 g Emmental Cheese
  • 1 tsp garlic salt
  • Olive oil

Equipment

  • Toasted sandwich maker
  • Small Frying Pan
  • Chopping Board and Sharp Knife

Method
 

  1. Put the frying pan onto a medium heat and add about 2 tsps of olive oil
  2. Thinly slice the mushroom
  3. Add the mushrooms to the pan and sprinkle with the garlic salt
  4. Stir the mushrooms to get a good covering or garlic salt and butter then leave to saute for a few minutes. (see note A)
  5. Once done turn off the heat
  6. Turn on your toasted sandwich maker if you haven't already
  7. Slice the Emmental cheese into thin slices
  8. Lay out the bread side by side and build layers of cheese and mushrooms on one slice
  9. Once all the mushrooms and cheese are used up place the other slice of bread on top
  10. Brush this slice of bread with olive oil
  11. Place in the sandwich into your toastie maker oil side down and press down gently
  12. Brush the top slice with olive oil and then close the lid
  13. Leave for approximately 10 minutes or until golden with gooey cheese escaping the sides of your toastie

Notes

A - When sauteing the mushrooms you want them to color only slightly. The process is looking to remove the moisture from the mushrooms and intensify their flavor without over cooking them.
