Eggy Bread Cheese Toastie

Is this a breakfast recipe, lunch recipe or both? It doesn't really matter, what matters is that this eggy bread cheese toastie is delicious and ready in ten minutes making it the perfect breakfast or lunch.

Ingredients
  

  • 2 Eggs
  • 2 Slices Bread
  • Gouda Cheese
  • Parmesan Cheese
  • Sunflower Oil for cooking
  • Salt
  • Pepper

Equipment

  • Frying Pan
  • Bowl
  • Fork
  • Handheld cheese grater

Method
 

  1. Heat the oil in the frying pan
  2. Crack the eggs into a bowl and beat with a fork
  3. Season the egg mixture with the salt and pepper
  4. Dip the first slice of bread into the egg until it is well covered and then place it in the frying pan
  5. Repeat the process with the second slice of bread
  6. Pour any left over egg onto the bread in the frying pan and then prod the bread with a fork to help the egg soak in
  7. After a few minutes flip both slices of bread
  8. Add the Gouda cheese to each slice
  9. After a couple of minute create a sandwich in the frying pan with the two slices
  10. Grate the Parmesan over the top of the eggy bread and then flip it over in the frying pan
  11. Cook for a few minutes and then serve with brown sauce
