Mushroom Toasted Sandwich

Ingredients
  

  • 2 Slices Thick cut bread White or brown
  • 2-3 Mushrooms sliced I used Chestnut mushrooms for an earthy flavor
  • 2 Slices Gouda cheese You could cheddar, American or red Leicester
  • 20 g Chopped onion

Equipment

  • Toasted sandwich maker
  • Small Frying Pan
  • Sharp knife
  • Chopping Board

Method
 

  1. Heat a glug of oil in the frying pan and add the onions and mushrooms
  2. Cook until colored and soft
  3. Place one slice of bread into a hot toasted sandwich maker
  4. Add a slice of cheese to the bread
  5. Spoon on the mushroom and onion mix
  6. Add the remaining slice of cheese
  7. Top the sandwich with the remaining bread and press down gently (careful of the hot toasted sandwich maker)
  8. Close the toasted sandwich maker and cook for between 8-10 minutes until crispy and golden
