Egg, tomato and onion breakfast toasted sandwich

A simple egg, tomato and onion breakfast toastie that can be ready in under 10 minutes and full you up until lunchtime.

Ingredients
  

  • 2 slices toast Pick your favorite bread
  • 1 tomato
  • 1 salad onion Also known as a spring onion
  • 1 tsp mayonnaise
  • Generous pinch of salt and pepper

Equipment

  • toaster
  • Small non-stick frying pan
  • Silicone spatula

Method
 

  1. Put the frying pan on a medium-high heat and add a splash of oil or butter
  2. Beat the egg and add to the pan and cook to your liking, folding the edges in slightly with the spatula as it cooks (this is so it fits nicely in the sandwich)

  3. Slice the tomato and onion
  4. Season the tomato with the salt and pepper

  5. Build the sandwich starting with the omelette
