Fajita Toastie

One of the best ways to use up leftover Fajita Chicken or Quorn filling is to make this delicious toastie.

Often when we enjoy Fajita Friday we find ourselves with some leftover chicken or Quorn fajita filling.

This is a wonderful combination of chicken peppers, sweetcorn and fajita spices and just to good to throw away.

Now, there a number of things you can do with Fajita leftovers but of course top of my list is to add a generous helping of cheese and make a fajita cheese toastie.

Fajita Kits and spicies

The easiest way to make fajitas for Fajita Friday is to grab one of these kits and cook it up.

  • Old El Paso Fajita Kit
  • Morrisons Fajita Kit
  • Santa Maria Fajita Kit

Alternatively, if you don’t have a kit then grab some simple ready made Fajita seasoning.

Ingredients

You need the following ingredients to make a Fajita Toastie.

  • 2 slices of bread
  • Leftover or freshly made fajita filling
  • 40 grams of cheddar or Gouda cheese

Directions

To make a Fajita toastie just follow these simple steps

  1. Lay out your bottom slice of bread and add half the cheese
  2. Spoon on the Fajita Filling
  3. Add the remaining cheese
  4. Add the top slice and place in a toasted sandwich maker that has had a few sprays of oil on the plates
  5. Cook for at least 10 minutes to ensure the fajita filling is cooked through and reheated correctly.

It is really important that you make sure any reheated meat is thoroughly cooked through to a temperature of 165ºF (75ºC). To make sure it reaches this temperature use a simple food thermometer.

Alternatives

If you still have tortillas left over from Friday night Fajitas then use these instead of bread to make a fajita tortilla toastie or quesdallia.

Equipment

To make a fajita toasted sandwich you will need the following equipment

  • Toastie maker with closed or open sandwich plates
  • Cheese grater
