Looking for something more than just a fish finger sandwich

Anyone can make a simple Fish finger sandwich. Now, while it is a tasty treat I wanted to step it up a bit. Moving away from fish fingers and mayo I decided to add some beans and a good helping of Gouda cheese.

Plus, I’m sure I read somewhere that fish fingers were full of vitamins and protein, and we all know the humble bean is a super food so this toastie could almost be called healthy. Almost.

Cook the fish fingers

Cook the fish fingers

Lay out your frozen fish fingers and place under the grill (broiler) until cooked. Remember to keep turning throughout the process to ensure an even cook.

I line the grill pan with foil as we have a couple of people in the house that really can’t stand fish and don’t want the grill tainted in anyway. If you have similar people in your household I suggest you do the same.

Cook the beans and toast the bread

Toaste the bread with the fish fingers

As the fish fingers are getting close to done heat up your beans and add two slices of bread to the grill.

Add the cheese

Melt the Gouda cheese

Once the bread is toasted on one side flip it over and lay out a slice of cheese on each.

I went for Gouda as it melts so well and has a good, but not overpowering, flavor.

You know it is ready when it starts to bubble and ooze into the toast.

Bring it all together

Now that everything is cooked it is time to bring it together in all its toastie glory.

First, lay out the fish fingers on the cheese and gentle push them into the cheese to ensure they sit well.

Spoon over the beans and then place the other slice on top. Followed by a firm push to bring it all together.

Push the sandwich together

Don’t worry about a few escaped beans.

Then slice through on the diagonal line and enjoy. If you are wondering why I say cut on the diagonal it makes for a more even split between the three fish fingers. If you cut horizontally you would most likely end up with 2 on one side and 1 on the other.
