These three flavors are a matched made in heaven and if you follow this recipe you can bring this winning combination to the humble toasted sandwich.
I first came across the combination of pesto, tomato and cheese many years ago when it was served to me as a canopy. It was basically a cherry tomato cut in half with each half sitting either side of a pesto laden square of mozzarella cheese. All held together on a cocktail stick.
It was divine. A wonderful combination of fresh tomato zing, cool mozzarella and basil and pine nut infused pesto.
So naturally, when I opened the fridge recently to see what we had for a toastie and I discovered a jar of pesto sauce I couldn’t wait to give this a try.
It didn’t disappoint and I strongly recommend you give this pesto, tomato and cheese toasted sandwich a go.
Ingredients
To make this delicious pesto, cheese and tomato toasted sandwich you will need:
- 2 Slices of bread
- 2 tsp of green pesto
- 1 tomato
- 2 slices of cheese (Mozzarella, Gouda or Cheddar)
- Pinch of salt
- Pinch of pepper
- Olive Oil
Method
Like all toasties this is very simple.
- Lay out the two slices of bread next to each other
- Spread 1 tsp of pesto on each slice
- Lay one slice of cheese on each slice
- Slice the tomato into half cm or thinner slices
- lay out the tomato on one slice and season well with the salt and pepper
- Bring the two slices together and press down
- Dab a little olive oil on each sandwich plate and insert the sandwich
- Cook in your toasted sandwich maker for 10 minutes
Key to this recipe
Seasoning the tomatoes is key to the success of this recipe. Tomatoes just love salt and pepper and it really intensifies the taste.
Also, don’t be stingy with the pesto sauce or worry that is starts to seep through the bread. This just adds to the color of the sandwich and flavor.

Ingredients
- 2 slices bread
- 2 tsp pesto sauce
- 1 tomato
- 2 slice cheese Mozzarella, Gouda or Cheddar
- 1 pinch salt
- 1 pinch pepper
- 1 tsp olive oil for cooking
Instructions
- Lay out the two slices of bread
- Spread 1 tsp of pesto on each slice
- Lay a slice of cheese of each slice
- Thinly slice the tomato and season with salt and pepper
- Lay the tomato on one slice of bread
- Bring the two slice together
- Dab the toasted sandwich plates with olive oil
- Cook the sandwich for ten minutes
