A Ham and Eggs Toasted Sandwich Recipe.
Occasionally, when it is on offer in the supermarket, we will buy a large ham and cook it up for Sunday dinner. It is absolutely delicious and makes a real change from the usual chicken or beef.
But, best of all with a big ham is you are left with big leftovers.
Now, one of my favourite things to do with the leftover ham is to make Ham and Eggs for breakfast. It was a dish I fell in love with while backpacking in the USA and always enjoyed it with a side of, hopefully homemade, hash browns.
So, I began thinking could I add a couple more ingredients and turn one of my favourite breakfasts into a great tasting toastie.
Of course the answer was yes and I created this delicious Ham and Eggs toasted sandwich recipe.

Ingredients
You will need the following ingredients to create this simple Roast Ham Toasted Sandwich:
- 2 Slices of thick bread
- 1 or 2 generous slices of ham
- 1 large egg
- 20 grams cheese (I used Red Leicester)
- 1 tbsp piccalilli
Thick Bread
This is a hearty sandwich so go for some nice thick cut bread or even better doorstep it from a fresh uncut loaf.
Roast Ham
One of the star ingredients in this toastie. Just make sure to give yourself a nice thick slice. You really want to be able to sink your teeth into this toasted sandwich.
Egg
Use a nice fresh large egg as you want to be able to make a one egg omelette that covers the ham well and pokes out of the side of the sandwich.
Cheese
The cheese is optional but it does add that lovely gooey meltiness to this sandwich.
I used a nice Red Leicester but you could just as easily use Gouda, Emmental or Cheddar.
Piccalilli
Piccalilli is a delicious mustard flavoured pickle of courgettes, cauliflower, gherkins and onions. It has a sharp and sweet flavour and goes really well with cold cuts of meat such as ham.
I purchased my Piccalilli from Marks and Spencer but you can order it directly from Amazon.
Directions
Follow these directions to make this egg, cheese and ham toasted sandwich.
- Add one beaten egg to a heated small frying pan
- Sprinkle the cheese on the egg as it is cooking and cover with a lid to allow the top of the omelette to cook
- Toast the bread
- Take a generous slice of the ham and add to one slice of bread
- Top the ham with the piccalilli
- Place the cooked omelette on top of the piccalilli
- Add the top slice of bread and push down gently
Optional twist
For a twist of this sih you can opt to fry the ham before putting it into the sandwich. However, if you do this make sure it is properly cooked through and hot.
Cooking this toastie in a toasted sandwich maker
You can bring the ingredients together in a toasted sandwich maker to cook but similar to frying you must cook it for long enough to make sure the ham is properly heated through.
When to eat this sandwich
This ham and egg toasted sandwich is a very versatile sandwich and while it is a great choice for breakfast it also makes a great dinner or supper and goes really well with a cold IPA.

This toasted ham and egg sandwich is a great example of using leftovers to reduce food waste and your food bills. It is also a great example of a simple premise when using up leftovers to add some cheese and a something tangy like piccalilli.

Ham and Egg Toasted Sandwich
Equipment
- Small Frying Pan
- cheese grater
Ingredients
- 1 Slice Cold cooked ham Make it a generous, thick, slice of slice
- 2 Slices Thick white bread
- 2 tsp Piccalilli
- 1 Large Egg
- 15 grams Red Leicester cheese
Instructions
- Beat the egg and cook in the small frying pan, adding the cheese as you cook it.
- Toast the bread
- Lay out the toast and add the ham,
- Add the piccalilli to the ham
- Add the omelette
- Top the sandwich with the remaining slice of toast and enjoy
