Omelette Toasted Sandwich

The ultimate breakfast

This is a simple omelette breakfast toastie, inspired by the Korean street food favorite called Gilgeori, that will set you up for the day ahead.

Gilgeori is a very popular street food toastie in Korea made  with eggs, carrots, cabbage and a few others things and while we think it is great and have the recipe on our site. I developed this recipe to get a similar hit of flavor without so much of the fuss making it the perfect choice for breakfast on a busy work day.

This is the basic recipe and you can add things to your hearts content and we have several ideas at the end of this post.

Ingredients

You need the following ingredients for this recipe

  • 2 Slices of toasted bread
  • 1 egg
  • three or four slices of ham
  • 15 grams of finely grated cheese
  • Dijon mustard
  • Mayonnaise

Equipment

You need the following equipment to make this toasted sandwich

  • Small frying pan
  • Toaster
  • Fine cheese grater

Method

Follow these simple steps to create this great breakfast toasted sandwich

  1. Crack an egg in a cup or bowl and whisk up
  2. Heat a frying pan on a medium heat and add a little oil
  3. Put the bread in the toaster
  4. Put the egg into the frying pan
  5. As the egg starts to firm up add the grated cheese
  6. Butter the toast and add the mustard and mayo to slice
  7. Place the cooked egg and cheese on one slice of bread
  8. Top with the slices of ham
  9. Top with the remaining slice of toast
  10. Press down and cut horizontally

What to eat this with

Enjoy this breakfast toasted sandwich with your breakfast drink of choice but I think it goes really well with a cup of strong coffee.

Alternatives

You can try the following additions or alternatives to this recipe

  • Slice up the ham and add to the omelette as you cook it
  • Use ketchup as well or instead of the mayo and mustard
  • Use different meats such as salami or chorizo – see salami version
  • Add mushrooms for a great earthy taste – see mushroom version

For a vegetarian version of this toasted sandwich simply leave the ham out.

Omelette Toasted Sandwich

A great breakfast recipe inspired by one of Korea's most popular street foods.

Equipment

  • Small frying pan (non stick is best)
  • toaster
  • Fine cheese grater

Ingredients
  

  • 1 large Egg
  • 15 grams Grated Cheddar or Mozzarella
  • 1 tsp Mayonnaise
  • 1 tsp Dijon mustard
  • 2 slices Bread
  • 4 slices Wafer thin ham

Instructions
 

  • Heat a little bit of oil in a pan
  • Crack the egg into a cup and beat
  • Toast the bread
  • Add the egg to the hot pan
  • As the egg starts to firm sprinkle on the cheese
  • Add a generous pinch of salt and pepper to the egg
  • Lay our the toast and butter
  • Spread the mustard and mayonnaise on the top slice
  • Add the omelette to the bottom slice
  • Place the ham on top of the Omelette
  • Place the top slice on top and press down
  • Cut horizontally and enjoy
