Cheese and pickle toastie

A recipe to turn a British classic into a delicious toasted sandwich

A cheese and pickle sandwich is one of Britain’s best loved sandwiches.

It has everything, a generous helping of full flavoured cheese and a some good dollops of sweet and crunchy pickle with a good hit of vineger.

But it is how these ingredients compliment each other than has made it a British favourite. The crunch of the pickle goes so well with the smoothness of the cheese, then the sweet vinegar of the pickle cuts through the richness of the cheese.

So why mess with a classic you may be asking yourself. Well, the answer is I love toasties and both these key ingredients can take some heat and still pack a great taste.

Plus, it is cold right now and this makes a great warming lunch and the gooey cheese really adds some fun.

Other names for a cheese and pickle sandwich

A cheese and pickle sandwich is sometimes referred to as a cheese and chutney sandwich. Often when a less traditional pickle is used.

It can also be referred to as a Ploughman’s sandwich but this often means it has salad added and resembles a Ploughman’s lunch between two slices of thick bread.

How to make a cheese and pickle toastie

Ingredients

I used the following ingredients to make this cheese and pickle toastie.

Two slice of thick sliced bread

It could be brown, white or rye bread but for this toasted sandwich it has to be thick. A cheese and pickle sandwich is a chunky sandwich normally and I don;t see why a toasted version should be any different.

Gouda cheese

I choose Gouda cheese slices as they melt really well and have a lovely taste, but you could also go for a traditional cheddar, double Gloucester or Red Leicester cheese option.

Sweet Pickle

While Branston Pickle is the most popular brand in the UK I went for a simple supermarket own brand sweet pickle. I didn’t go for extra chunky but this sandwich could take it if you want to give it a go.

What is pickle

In the UK Pickle is a shorthand version of saying a jar of pickled vegetables. It is traditionally a collection of chopped root vegetables pickled in a vinegar sauce made with spices, tomato, onions and sugar.

By contrast Pickle in the USA often refers to a cucumber pickled in sweet or salty vinegar. Great in burgers but not so nice on its own in my view.

You don’t need a lot of equipment to make this cheese and pickle toasted sandwich. In fact all you really need is a toasted sandwich maker like my trustee Tower 3-in-1.

Cheese and pickle Toastie

A classic British Cheese and Pickle Sandwich turned into a delicious toastie. Cheese and Pickle toastie recipe.

Equipment

  • Toasted sandwich maker

Ingredients
  

  • 2 slices Thick cut white bread
  • 2 tbsp Pickle Branston pickle or any good brand will do
  • 2 slices Gouda cheese Or use Cheddar, Double Gloucester or Red Leicester

Instructions
 

  • Lay out the bread
  • Place a slice of cheese on one slice of bread
  • Place the pickle on the cheese
  • Place the other slice of cheese on top of the pickle containing the pickle in a pocket of cheese
  • Top the sandwich with the remaining slice of bread and cook in your toasted sandwich maker for 10 minutes until golden brown
