Mushrooms are a fantastic food that is absolutely full of flavor while low on calories and provides good hit of protein. Plus, they make an excellent toastie ingredient.
Top tip for a Mushroom toasted sandwich
One top tip for any toasted sandwich that uses mushroom is to cook the mushrooms before you put them in the toasted sandwich. The reson for this is that regular mushrooms (not dried) contain a lot of water that is released when they cook. So, if you don’t cook this out first (and release the flavor of the mushrooms) it will come out when you cook the toasted sandwich resulting in a soggy rather than crispy toastie.

How to make a mushroom toasted sandwich
Ingredients
- 4-5 mushrooms sliced (I used chestnut mushrooms for a bit more flavor than your standard button mushroom)
- 10 grams of butter
- 20 grams of chopped onion
- 2 slices of Gouda cheese
- 2 slices of thick cut bread
Directions
- Fry the mushrooms and onions in the butter until the mushrooms have colored, seasoning with salt and pepper as you cook
- Lay the first slice of bread on the hot toasted sandwich maker
- Place one slice of cheese on the bread
- Spoon the mushrooms and onions onto the cheese
- Place the second slice of cheese on top of the mushrooms
- Place the second slice of bread on top and close the toasted sandwich maker
- Cook for 8-10 minutes until the sandwich is golden and crispy and the cheese is starting to leak out
What to eat with a Mushroom toasted sandwich
The following sauces go well with this Mushroom toastie
- Sweet chili sauce
- Tomato ketchup
- Dijon Mayonnaise
- Soy Sauce (use it as a dip)

Mushroom Toasted Sandwich
Equipment
- Toasted sandwich maker
- Small Frying Pan
- Sharp knife
- Chopping Board
Ingredients
- 2 Slices Thick cut bread White or brown
- 2-3 Mushrooms sliced I used Chestnut mushrooms for an earthy flavor
- 2 Slices Gouda cheese You could cheddar, American or red Leicester
- 20 g Chopped onion
Instructions
- Heat a glug of oil in the frying pan and add the onions and mushrooms
- Cook until colored and soft
- Place one slice of bread into a hot toasted sandwich maker
- Add a slice of cheese to the bread
- Spoon on the mushroom and onion mix
- Add the remaining slice of cheese
- Top the sandwich with the remaining bread and press down gently (careful of the hot toasted sandwich maker)
- Close the toasted sandwich maker and cook for between 8-10 minutes until crispy and golden
