Mushroom and Bean Toasted Sandwich

This bean and mushroom recipe delivers a really tasty and hearty lunch or breakfast that is ready in under 20 minutes.

Winter is coming…in fact winter is here and it is bloody cold. I am currently working from home and as it is just me I am resisting putting any heating on during the day and instead typing away in fingerless gloves.

So, after a few hours of working away in a cold house and lunch time finally arrives all I want to eat is something hot, hearty and comforting. Luckily, this mushroom and bean toastie delivers on all three.

It is also a great way to use up any leftover beans and those few mushrooms you have that just aren’t enough for a whole meal.

Ingredients

The ingredients to make this mushroom and baked bean toasted sandwich recipe are:

  • 2 slices of thick cut bread
  • 40 grams cheddar cheese
  • baked beans
  • 3-4 mushrooms

Thick cut bread

You can use whatever type of bread you like but I recommend it is thick cut to contain the contents of the mushroom and bean toastie and crisp well.

Cheddar Cheese

Cheddar cheese works really well in this mushroom and bean recipe as it has a strong taste that complements the sweet beans and woody mushrooms.

Cheddar cheese also scores high on the melting factor providing that great gooey center we all crave from a toasted sandwich.

Alternatively you could use Gouda or Emmental cheese.

Baked Beans

I am torn whether the baked beans or the mushrooms are the star of this recipe and maybe they both deserve top billing.

The baked beans in this recipe deliver a lovely sweet tomato flavor, great texture and as a bonus a good hit of protein and fiber while being a low GI food filling you up for longer and keeping the urge for an afternoon biscuit at bay.

Mushrooms

I love mushrooms in a toasted sandwich, so much so that I have dedicated a whole area of this food blog to the glorious mushroom. They have a wonderful range of flavor and texture that can really elevate a sandwich.

Plus, they complement baked beans really well.

For this recipe I used simple button mushrooms but you could use any fresh mushroom in this sandwich and it will work well.

Directions

Follow these simple directions to recreate this delicious Baked Bean and Mushroom Toasted Sandwich Recipe.

  1. Slice up the mushrooms and fry until cooked in a little oil
  2. Grate the cheese
  3. Open the hot toasted sandwich maker and spray with oil
  4. Place one slice of bread in the toaster
  5. Sprinkle the bread with a half the cheese
  6. Spoon the beans on to the center of bread and allow them to spread out naturally but leaving at least a 1cm gap from the edge of the bread
  7. Spoon the mushrooms on top of the beans
  8. Sprinkle on the remaining cheese
  9. Place the remaining slice of bread on top and press down gently
  10. Close the toasted sandwich maker and cook for 8 minutes until golden brown

Eat this toastie with

This toastie goes really well with a Dijon mustard dip or even a nice ketchup.

Breakfast or lunch

This mushroom and bean recipe can be enjoyed as breakfast or lunch.

Equipment required

The following equipment is required to make this mushroom and bean toastie.

Small fry-pan

I used the small fry pan for cooking up the mushrooms in this recipe. It makes it easy to fry them up quickly and I recommend a non stick version to make sure you get all that mushroom loveliness.

Silicone Spatula

I simply love silicone spatulas. They are light weight, easy to clean and don’t damage the non-stick on the frying pan.

Cheese Grater

Not always required but in this case it was really useful to grate the cheese and be able to use it on the bottom and top of the sandwich.

when choosing a grater always look for a nice robust model that will stand up to years of cheese grating.
